Your mentioning that about cooking non-baked things has had me pondering at how it works for me a fair bit recently, which is why I was noticing that this might be a thing worth writing up rather than just an, "eh, there wasn't much in the fridge so I threw together some things for dinner, as you do" thing.
It also occurs to me that a lot of developing the skill was from much experimenting, and a fair bit of the experimenting is from a combination of curiosity and being happy to eat things that are not, objectively, particularly good, especially if they are interesting. Which means that it's really easy to be successful when cooking experimentally for myself.
